This is one of my favorite condiments because it elevates the flavors of so many different things. From grilled chicken to fresh pita bread and even burgers. The most important thing is to shred the cucumber and let it drain in a colander with some salt. Getting as much excess water out makes such a difference in the consistency and lengthens its fridge life also. Cilantro or parsley work well, sometimes I use a mix of both. A nice, thick Greek yogurt is key for holding it all together.
