I love everything about raw seafood. Honestly, there are few things that I can eat on a daily basis and not get sick of. I made a salsa for these with rice wine vinegar, grated ginger, cucumber, cilantro, salt and pepper. These oysters were SO fresh, reminded me of being at the beach. The brininess was perfect. If you don’t mind beating the hell out of your fingers to shuck these guys, it’s worth it.
