So over the Christmas holiday, during the pizza making at my Nana’s house, I realized that I probably should stay gluten free. My pizza was the first gluten thing that I had eaten since going vegan and I totally felt the consequences. I immediately felt bloated and tired. My stomach felt like I had just ate a bag of rocks. I’m not sure about the science behind it but I know my body didn’t appreciate it.
I’m going to have to do some reading about the specifics of eating gluten free now. I know a major reason for doing it is celiacs disease but other than that, I’m not sure.
Most of the raw vegan recipes are already gluten free, which is great. There are tons of gluten free options that I’ve already delved into: quinoa pasta, rice flour, almond meal, gf oats, etc…so I’m not worried about feeling restricted. Lol.
I made cranberry & hemp seed truffles tonight with my daughter. Taste test got two thumbs up and a mouth full of goodness. Recipe will be up tomorrow!
