Chocolate Coconut Kale Chips.
About a year and a half ago I had bookmarked this recipe for chocolate kale chips. I made the chocolate coconut cashew cream but tasted it and decided to just eat it as is.
I revisit that cashew cream recipe constantly because it is sooOOoo good. So, I made it yesterday and decided with my abundance of garden fresh kale that I would [finally] try it out.
They were good!!
I realize that this is somewhat of a novelty; I won’t be making chocolate coconut kale chips all the time. But I’d be lying if I said I didn’t eat them all in 2 minutes…
Here’s the recipe for my choco-coco cream. Do with it what you will. 🙂
Ingredients:
3/4 c raw cashews, soaked 6+ hours, drained & rinsed well
2 T unrefined coconut oil
1/3 c cocoa powder/carob/raw cacao
1/4 c unsweetened dried coconut flakes
1/4 c maple syrup or other liquid sweetener
Blend everything until smooth.
Makes about 3/4 cup of cream.
It will harden when refrigerated but softens easily when left out for an hour.
