Meringues!
A cookie that I don’t feel so guilty about eating 5 at a time. It’s kind of crazy that you just need 2 egg white and 1/2 cup of sugar to make something with such a unique texture and tastes SO good. I added vanilla and almond flavoring, a drop of red food coloring and some chopped semi-sweet chocolate. It’s whipping the eggs whites that ensure you get that texture and adding the sugar tablespoon at a time. Whip whip whip! When you see stiff, glossy peaks in your batter you’re ready to bake.
