Mango Lassi.
A creamsicle has to be one of my favorite flavor combinations. Tangy citrus with sweet cream. It’s perfect in every way. I was craving something like that and decided to make a lassi style smoothie. Lassi is a traditional Indian drink, usually yogurt blended with fruit and spices.
For my smoothie, I juiced equal amounts of oranges and pineapple until I had 1 cup of juice. Then I blended the juice with 1/3 cup of full fat coconut milk right from the can and 1 ripe mango, diced. Topped with an orange slice and a handful of unsweetened coconut shreds.
If you don’t use a juicer…
Blend:
1/2 c pineapple
1 c mango
2 frozen bananas
1/3 c full fat coconut milk
1 c water
1/2 c fresh squeezed orange juice
This really knocked my socks off. Tropical paradise in a glass. Sure, a little indulgent (because of the coconut milk) for an everyday drink, but you could always substitute that with almond milk or another non-dairy milk if it suits you!
Sip. Repeat. Love. Enjoy!
