Margarita Popsicles. (No tequila required)
I made these on a whim – let’s just say it’s been YEARS since I’ve drank tequila, let alone a margarita – but I got this stunningly beautiful, very coarse, Himalayan pink salt and I had a craving for that margarita-y symphony of tart and saltiness.
These are pretty basic. I’m sure you could add 1/4 cup of tequila if you wanted to, to add some “oomph” if you will, but I think they taste pretty damn good how they are.
Be careful with the salt though; it will rapidly melt the popsicle (duh).
Ingredients
- 1 can lite coconut milk, shaken as well as you can
- 1 lime, sliced
- Juice from 2 limes, equal to about 1/2 c
- Maple syrup or other liquid sweetener of your liking, honey or agave would be fine
- Coarse grain salt for serving, regular salt is fine if you can’t find any other
Whisk together the 1/2 cup lime juice with 1 1/2 cup coconut milk and 3-4 tablespoons of maple syrup.
Taste.
Not sweet enough? Add more sweetener. Not creamy enough? Add a bit more coconut milk. 1/2 a cup of lime juice should be sufficient but you can always adjust it to your liking.
Pour into popsicle molds – you should have enough for 4 popsicles.
Freeze overnight.
Right before serving, rub a slice of lime over one side and sprinkle with a pinch of coarse grain salt.
