Salted Pistachio & Matcha Vanilla Bean Ice Cream. (and others)

whoever stumbled upon the frozen banana ice cream concept is a damn genius.

 

another post about banana ice cream? sorry, not sorry. It’s just that good.

The only downside is that you need a good blender/ food processor in order to really get the bananas blended and smooth. By good, I mean a high powered one.

 

We’re getting back into those hot weather months so I figured it’d be nice to make a big batch of ice cream, make a few different flavors and stick them in the freezer for an easy snack. I spend a LOT more time in the kitchen in the winter months than I do in the summer so the convenience of having something cold, healthy and ready to eat in my busy summer season, is really nice.

I blended approx. 10 frozen bananas, (sliced previously and frozen overnight) tamping them down and stopping to unclog the blade as necessary. I made enough to fill 3 pint jars about 3/4 full.

 

PS – my vitamix hates me. I swear I’m going to blow out the motor one of these days making ice cream.  The trick is not to add any liquid or just add as little as possible. This will help you to achieve a creamy, thick texture.

*Adding liquid will give you texture similar to a smoothie and when you freeze it, it will be less creamy and more like an Italian ice. 

When my bananas were completely smooth, I stirred in 1/4 teaspoon of vanilla bean seeds straight from the pod. If you can find vanilla bean paste, that works great too! Of course you can use vanilla extract or any flavor you like for the base, I just happen to love vanilla.

 

So now with this plain, vanilla base you can portion it off into a few different containers and add whatever flavors you like.  I added mini chocolate chips and a spoon of peanut butter into one, matcha green tea powder and salted pistachios into another (my FAVORITE without a doubt) and blended blueberries into the last batch.

By the way – salted pistachios taste amazing in all three flavors…just in case you were wondering. I most definitely added a handful into the chocolate chip batch too.

Yes, you can eat ice cream for breakfast.

      It was definitely an investment! I wouldn’t have spent the $$ if I wasn’t going to use it every day though. It’s worth it! 🙂
