I’m in love with these beets! So delish. All they need is a little salt & pepper. The flavor is amazingly earthy and full. I softly boiled them until a fork could easily pierce them, drained them and let them cool so the skins could be peeled off. I love using beets to make dips or spreads. The flavor of them goes well with nuts and garlic. Also a play on carpaccio works great with beets! Sliced very thin and sprinkled with olive oil and salt. Feta cheese to go along side. Yum!!
These are called candy beets and they only took 60 days from start to finish in the garden. Don’t throw away those beet tops either! They taste delicious sautéed with garlic, just like any other leafy greens (spinach, chard or kale). The colors are beautiful as well. It’s always a surprise to see what color is going to pop out. Lol. It’s the little things in life that excite me.
