Mango Cheesecake pt. 2.
Yes, I actually waited a full 24 hours to dig into my cheeseless cheesecake and holy &@$!? was it worth the wait.
Now that I have ate a piece (2 actually, and my 4 year old daughter had 1) I would say if you’re going to make it and you want more of a mango flavor, add another whole chopped mango to the filling. I posted the recipe yesterday if anyone is interested. Otherwise it’s perfection! The crust is amazing. Filling is smooth and creamy and just the right sweetness. I put some sour currants on top to counterbalance the sweetness. Any other tart berry would do the same, raspberry, blueberry, blackberry, etc…
