Summer Rolls & Miso Sauce.
Nope, not close to summer at all but was craving some summer inspired food…
Summer rolls!
The sauce for these is amazing. The combination of mint and veggies in the roll with the sweet and salty sauce is perfection.
Sauce ingredients:
1/4 c light miso paste
2 green onions chopped
4 T lime juice
1 T rice wine vinegar
1 T sesame oil
1 T light brown sugar, or other sweetener of your choice (maple syrup)
1/8 t cayenne powder
1/4 c olive oil
Blend all ingredients. Refrigerate until needed. (that was a no-brainer…)
For my summer rolls I used grated carrot, julienned cucumber, kelp noodles, mint and cilantro. I bought rice paper wrappers from my co-op to use for this, although you could use anything, collard green leaves, kale, lettuce, etc…
Dip your wrapper in a shallow bowl of cool water and wait for it to soften. Gently pat dry on a towel. Layer your ingredients. Roll up halfway and then tuck in the ends and finish rolling completely (like a burrito). Takes a few times to get it right. Practice makes perfect!
The rolls and sauce will keep in the fridge for a few days if you want to make extra…
