Rainbows for Breakfast.
Fresh, organic passion fruit?! I’ve had dishes with passion fruit in them or passion fruit drinks but I’ve never seen a fresh one at the grocery store before!
As expensive as these were, I just couldn’t pass them up.
So, my beautiful passion fruit coupled with the first pomegranate of the season called for some parfait action.
I’m a sucker for a beautifully layered anything really; cake, kabobs, lasagna…I love creating layers of flavor.
I made my favorite frozen banana & coconut crema.
1 1/2 frozen bananas, which equals about 1 1/2 cups of sliced frozen banana
And blended that in the vitamix with
1/3 cup coconut cream, which is the thick layer that you can scoop off the top of a can of full fat coconut milk, after refrigerating it at least 24 hours. Even if you can’t get just the cream by itself, 1/3 cup of full fat coconut milk (canned) will do just fine.
From top to bottom:
Minneola oranges, frozen local raspberries, passion fruit pulp, banana coconut crema and pomegranate arils (fancy name for the seeds).
