I made the best little noodle bowl yesterday. Gluten free and vegan! Kelp noodles are (duh) made from kelp but they’re not strong in flavor so they go really well with any flavor. The first time I had them I was surprised by the crunchiness because the look like rice noodles and I wasn’t expecting that texture. I made a dressing with peanut butter, miso paste and lime juice, added red and orange bell peppers, avocado and green onion. Great lunch!
Off on a tangent…I can’t help but think that people who copy other’s styles are underestimating their own creativity. Be original. There’s no reason to keep your brain on standby. Use the damn thing! It’s there for a reason.
