Day 4 and I’m not bored at all. Thankfully vegan or not, I have inordinate amounts of creativity when it comes to food.
This is a super easy meal to make, as long as you have somewhere to buy kelp noodles! I eat them all the time. They remind me of seaweed salad. Same neutral flavor and nice crunch.
I used 1 part miso to 2 parts peanut butter to create the sauce. Mix and add some rice vinegar to loosen the sauce. Julienned some bell peppers and added sesame seeds. Some raw zucchini also adds a nice crunch!
