Fried Avocado & Grapefruit.

I’d been waiting for a reason to combine avocado and grapefruit. I was inspired by someone to coat my avocado and fry it, so I did just that.
I dredged a couple thick slices (thick so you don’t risk the avocado breaking while you’re frying it) in masa flour.
I heated about an inch of olive oil in a sauce pan over medium heat and when the oil was hot, used a slotted spoon to drop the slices in. The oil should be hot enough that when you drop the avocado in, it immediately sizzles. Make sure the whole slice gets covered in the oil. It only takes a minute for these to turn golden brown and crisp. Literally, no more than a minute is necessary.
Remove the avocado and let drain on paper towels and season with salt.
This went perfectly with my grapefruit and black bean salad. I layered beans with tomatillo, grapefruit, the fried avocado and topped it with sriracha and the last few drops in a bottle of agave I’ve had laying around for ever. Some rice or quinoa would also go great here!
