…it’s kind of chocolate covered candy, but kind of healthy…
I’ve had this recipe bookmarked from oh she glows for months and just realized today that I still haven’t made it. Lucky me, I had all the ingredients on hand! I always have chia seeds, coconut oil, dates and nut butter in the house and happened to have bought a bunch of vegan dark chocolate chunks last week and hadn’t used/ate them (all) yet. All the ingredients you need!
These are a play on those “Rolo” candies, which are chocolate covered blobs of caramel. Good but sugar OVERLOAD.
Not necessary to eat that when you have dates, dubbed as natures candy.
These candies taste best right out of the freezer.
Ingredients:
200 grams or about 11 large soft dates (if not soft, soak in lukewarm water for 20 minutes)
1/2 T nut/seed butter
Pinch of fine grain salt
1/2 c dark chocolate chips (non-dairy if vegan)
1 t coconut oil
Chia seeds for topping
Blend dates, nut butter and salt until smooth.
Set mixture in freezer for 10 minutes.
Remove and shape into balls, should make about 15-18.
Freeze for another 10 minutes.
Melt chocolate with coconut oil over lowest heat possible or a double boiler.
Remove from heat when two thirds of the chocolate is melted to prevent burning it and stir until it melts completely.
Dip frozen caramel balls into melted chocolate and place on parchment or wax paper.
Sprinkle with chia seeds.
Freeze for 20 minutes before serving.
