Raw Tacos. [favorite.]
Who doesn’t love tacos, honestly?
This raw walnut meat is so easy to make and is SO GOOD. Honestly, as an ex-omnivore, I think this is a great segue for someone new to raw vegan eating. It looks like ground meat and it has the flavors spot on.
Walnuts are one of the best sources of omega-3 fatty acids and have been recently discovered as having high levels of polyphenolic antioxidants. Omega fatty acids are essential for healthy bodies and brains. Antioxidants are known to help with aging, inflammation and neurological disease. Walnuts also contain vitamin E which protects cells from free radicals.
I made completely raw tacos this time, using endive and radicchio for the shells, cashew cream, tomatoes, red onion (soaked in water to remove some of the pungency), chopped bell peppers and jalapeño.
Ingredients for walnut meat:
1 1/2 c raw walnuts, soaked overnight and rinsed thoroughly before using
1 T soy sauce
1/2 T cumin
1 T olive oil
Pinch of salt
1/8 t cayenne powder
1/2 t dried oregano
1 t paprika
Blend all ingredients in a food processor until it become the texture of ground meat. Taste and adjust seasoning if necessary.
Store any unused portion in the fridge for up to 4 days.
