Kelp Noodle Salad. [with peanut miso dressing]
I always pay homage to the reason I went vegan in the first place; raw food. My body never felt better than when I did the raw food cleanse last year. I usually eat one raw meal a day but I’ve been completely raw this entire week and I feel great. Now, I’ve said this before and I’ll say it again, everyone’s body will react differently to raw food and it may not be ideal for some. But it doesn’t hurt to try for a few days and see how you feel!
This is always my fall back lunch when I’m in a raw state: kelp noodle salad. They’re neutral in flavor and they go well with any veggies. I’ve fallen into the routine of having them with bell peppers, mint and a peanut miso dressing. Simple & amazing.
Here’s my dressing recipe:
1 T peanut butter
1 1/2 t miso, I use a mellow red miso
Juice from half a lemon, should be about 1/4 cup
1 t olive or coconut oil
Whisk all ingredients except oil together until a smooth paste is formed.
Stir in oil.
Taste and adjust seasoning if necessary. You shouldn’t need to add salt as the miso is the salty component here.
If it’s too thick add more lemon juice!
Toss your noodles in the dressing and let them sit for 5-10 minutes to soften. The acid from the lemon juice will soften them quite a bit.
I usually chop 1/2 a bell pepper and throw that in as well. Mint or cilantro add a freshness to this, either one works, or use both together! Some red chili flakes wouldn’t hurt this either. I always like a little spice.
