Raw Food Day 10. [raw vegan brownies]


I spent the better portion of my day yesterday putting solar panels together so I never got a chance to post this deliciousness.

This might possibly be the best dessert, vegan or not, that I’ve had in a while. I’m a sucker for any kind of chocolately, gooey, fudgey brownie type dessert and this one absolutely cured my cravings. And it’s totally healthy to boot!

Raw Vegan Brownies

1 1/2 c raw walnuts
1 1/2 c medjool dates, pitted
1/3 c raw cacao or carob powder
1 T coconut oil or butter
2 T raw almond butter, or other nut/ seed butter of your liking

Optional: coconut flakes, peppermint extract and cocoa nibs. I didn’t use any of these because I prefer my brownies plain and pure but go for it if you want to try something different!

Blend all ingredients in a food processor and add a teaspoon of water at a time to make the “dough” come together. When everything is uniformly blended, press into an 8×8 pan and refrigerate for 2 hours. Done! Cut and enjoy. You can wrap these in parchment paper if you need to store them. They’ll stay good in the fridge if you don’t eat them all first…

So now that I’ve done 10 days of raw vegan, I’m going to slowly incorporate cooked food back into my diet while staying vegan. I can’t believe I’m saying this but…I don’t miss meat! Or fish…or cheese for that matter. I feel so healthy! Plus I lost almost 8 pounds without really noticing…and that’s a great feeling. I was never really a big meat eater to begin with but I do enjoy cheese. Especially local farm cheese. But dairy is not particularly healthy anyway so I’m better off.
