Winter Vegetable Potluck.
I’m SO EXCITED to get started on my garden this spring. Last year was our first large scale garden (about 1/3 acre) and it was hard work but fruitful (pun intended).
I’ve been dying to go through my Miller’s catalogues and pick out what I want to order but I need to wait a bit longer. I’m planning on starting some kiwi vines this year. It’s usually about 5-7 years before you actually harvest fruit from them! Seems like a long time but it’s worth it. Possibly a few dwarf cherry trees as well. I’m also planning on bringing some veg to a farmers market in Queens so I’m trying to figure out what I’d like to grow a lot of. Thinking beets and carrots? Rainbow carrots and candy cane beets…yum. I want to bring things that you don’t see in the grocery store all year long. Tomatoes would be kind of difficult to transport although I’d love to do that too.
So about my winter veg…I roasted butternut squash and cauliflower. Made the squash into soup (posted that recipe here) and puréed the cauliflower with some soaked cashews and nutritional yeast to make a cream. Also toasted the squash seeds and kale for some texture.
