Banana Walnut Cinnamon Freezer Fudge. [raw!]
Freezer fudge is perfect for those of us that need the occasional midnight snack and want it to be healthy.
I make a lot of these at a time and keep them hidden away in the freezer. Easy to make; only 5 ingredients!
You must keep these frozen, otherwise they melt quickly.
Next, I’d like to make these with a little chocolate ganache stuffed in the middle…
I’m loving this raw till 4 thing by the way. Even though I’m not following it exactly how Free Lee The Banana Girl suggests, it still motivated me to eat mostly raw and all vegan again.
I modified it just to add veggies before 4 and nuts all around. I can’t go without some almond butter or some walnuts. I also eat smaller meals more often than the larger meals she suggests.
Recipe from my whole food life. Thanks!
Makes approx. 15 mini cups.
Ingredients:
3 c walnuts
2 very ripe bananas
1/4 c expeller pressed coconut oil
2-3 T real maple syrup
1 t cinnamon
Optional-
Toppings: chia seeds, walnuts, dark chocolate
Grind walnuts in a food processor or high powered blender for about 2 minutes, until mixture starts to clump together.
Add in remaining ingredients and blend until incorporated and smooth.
Spoon mix into a muffin tin, I used a mini sized one.
Cover and freeze for at least 2 hours before eating.
Enjoy!
