Creamy Blueberry Pudding.

My last attempt at blueberry pudding was not fruitful (pun intended). I forgot that blueberries contain a high amount of natural pectin and when I blended them with raw cashews, it almost immediately turned into a stiff gel.

I realized I needed something else as a binder to keep it smooth and loose. Bananas? Sure, why not!

This worked out really well and I’m glad to make it whenever the craving calls. Simple enough and I always have the ingredients on hand.

Ingredients:

2 c fresh blueberries
1 c sliced banana
5-6 soft medjool dates, pitted
1/4 t orange zest
1/2 c raw macadamia nuts or cashews
1 T coconut oil

Blend all ingredients in a high speed blender until smooth.
Be careful to not let your pudding get hot from blending. The vitamix starts to heat up whatever it’s blending after a couple minutes, but you shouldn’t need to blend for more than one minute anyway.
Chill in the fridge for at least an hour before serving.

This is great topped with fresh berries and chia seeds.

      Ah yes, that’s where a copy editor comes in handy…I always forget something! This makes 4 servings, about 1/2 a cup each. 🙂
